Who says you can't have pumpkin pie for breakfast? Pumpkin overnight oats will give you the taste of a sweet delicious pie!
INGREDIENTS:
½ cup gluten free rolled oats
1 teaspoon chia seeds
½ teaspoon pumpkin pie spice
¼ teaspoon ground cinnamon
1 ½ teaspoons coconut sugar
3 tablespoons coconut cream or vanilla yogurt
1/3 cup pumpkin puree
½ cup non-dairy milk
½ teaspoon pure vanilla extract
1–2 teaspoons pure maple syrup (optional, but recommended)
Toppings:
Cinnamon, #bassénuts pecans, plain yogurt
