RECIPE: CHICKEN PASTA SALAD

Delve into Chicken pasta salad goodness; the perfect hassle-free meal prep recipe!  

Ingredients:

  • 1 pound Rotini pasta (cooked according to package directions)
  • 2 pounds of boneless skinless chicken breast (cooked to taste, diced into bite-sized pieces)
  • 1 red onion
  • 1 cucumber
  • 1 bell pepper
  • 1 tomato
  • Cilantro (to taste)
  • ¾ cup Feta cheese (diced or crumbled)
  • 1/2 cup Bassé Edamame Power Mix
  • 1/2 cup Bassé Organic Pumpkin Seeds

For the salad dressing: 

  • ⅓ cup extra virgin olive oil
  • ⅓ cup red wine vinegar
  • 6 tbs lemon juice
  • 2 tbsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper

 

Preparation: 

In a large bowl, mix together pasta, chicken breast, vegetables, Feta cheese, Bassé seeds and salad dressing. 

Toss until well combined, serve and enjoy!
