Ingredients:
- 1 pound Rotini pasta (cooked according to package directions)
- 2 pounds of boneless skinless chicken breast (cooked to taste, diced into bite-sized pieces)
- 1 red onion
- 1 cucumber
- 1 bell pepper
- 1 tomato
- Cilantro (to taste)
- ¾ cup Feta cheese (diced or crumbled)
- 1/2 cup Bassé Edamame Power Mix
- 1/2 cup Bassé Organic Pumpkin Seeds
For the salad dressing:
- ⅓ cup extra virgin olive oil
- ⅓ cup red wine vinegar
- 6 tbs lemon juice
- 2 tbsp Dijon mustard
- ½ tsp salt
- ½ tsp black pepper
Preparation:
