A pistachio & strawberry cookie and a lemon & raspberry cookie—both finished with our pistachios for that perfect, nutty bite.

Preheat oven to 350°F (180°C).
In a bowl, cream butter and sugar. Add egg and vanilla, then mix in flour, baking soda, and salt.
Fold half of the Bassé pistachios into the dough
Top half of the cookies with pistachio cream and strawberries. Top the other half with lemon curd and raspberry coulis.
Finish all cookies with the remaining Bassé pistachios on top. Serve and enjoy.
