Salad dressing
Cook the pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente.
Drain, rinse briefly under cold water to cool, and set aside.
Prepare the chicken
For uncooked chicken, season to taste. Cook in a pan over medium heat (or bake) until fully cooked and golden, about 15–20 minutes.
Let cool slightly, then dice or shred into bite-size pieces.
Prep the vegetables & add-ins
While the pasta and chicken cool, dice vegetables into small, even pieces.
Measure out 1/2 cup of Edamame Power Mix and 1/2 cup of Organic Pumpkin Seeds and set aside.
Make the dressing
In a small bowl or jar, whisk together all dressing ingredients until smooth and well combined.
Taste and adjust seasoning if needed.
Assemble the salad
In a large mixing bowl, combine the cooled pasta, chicken, vegetables, Edamame Power Mix, pumpkin seeds, and cheese (if using).
Pour the dressing over the salad and toss gently until everything is evenly coated.
Chill & serve
Cover and refrigerate for at least 30 minutes before serving.
This chicken pasta salad keeps well in the fridge for 3–4 days, making it perfect for easy lunches or ready-to-go dinners. If prepping ahead, you can reserve a little dressing and mix it in just before serving for extra freshness.
