WHEN CASHEWS MEET INDULGENCE.


Soft muffins with the perfect crunch. 


Ingredients

  • 1 cup cashew
  • 1 cup flour
  • 1 cup oats
  • 2 eggs
  • 1 1/2 tsp baking powder
  • 1/4 cup applesauce
  • 1/3 cup milk (as you prefer)
  • 1/2 cup greek yogurt
  • 1/4 cup honey
  • 1/2 tsp baking soda
  • 1 pinch of salt (if using)

Directions

Step 1

Preheating: 

Preheat the oven to 185C / 350F

Prepare a muffin tray (paper liners or lightly greased)

Step 2

  • In a large bowl, mix the dry ingredient
  • In another bowl, mix the wet ingredient

Mix until smooth and well combined

Step 3

Combining:

  • Pour the wet ingredients into the dry ingredients
  • Gently mix with a spatula or spoon

Step 4

Adding Cashews:

  • Add the chopped cashews
  • Gently fold them into the batter to distribute evenly

Step 5

Filling the molds


Baking:

  • Bake for 18 to 22 minutes
  • Check with a toothpick : it should come out clean

Cooling: 

  • let rest for 5 to 10 minutes before removing from the pan
