Preheat the oven to 375°F (190°C) and line a baking dish with parchment paper.
Carefully remove the top rind of the brie using a sharp paring knife, keeping as much cheese as possible.
Place the brie, cut side up, in the prepared baking dish.
Spread a layer of fig jam over the top of the brie.
Sprinkle pistachios over the jam.
Bake for 15-20 minutes, until the cheese melts and the jam bubbles. Serve immediately with crusty bread.
