Pumpkin season is in full swing and for the occasion, we have created a simple and delicious soup for you!
2 tablespoons olive oil
1 medium yellow onion, very finely chopped (sautéed if you want extra flavour)
3 cloves garlic, grated
1 can pumpkin purée
2 tablespoons fresh thyme leaves, plus more for serving
3/4 teaspoon kosher salt
1/2 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground ginger
1/8 teaspoon cayenne pepper
2 cups of water or vegetable broth
2 tablespoons of maple syrup Toasted #bassénuts pumpkin seeds, for serving.
1. Mix the ingredients over medium heat and let simmer for 10 to 15 minutes.
2. Use a handheld blender until your preferred consistency.
3. Top each soup with toasted #bassénuts pumpkin seeds.
