INGREDIENTS:

3 cups sweet potato
1/3 cup Bassé dried Cranberries
1 Garlic clove
1/3 cup Red onion
1 cup Quinoa
1 tsp Dijon mustard
1 tsp Honey
1 tsp Olive Oil
3 tbsp Bassé Pumpkin seeds, toasted

METHOD:

1. Cook the quinoa according to instructions.

2. Place in a bowl and let cool. Peel and dice the sweet potato.

3. Roast them in the oven at 400F for 20-25 minutes.

4. Let cool.

5. Mix the rest of the ingredients in a large bowl and enjoy!
